Will we be able to flip the eye peice over so we can see an image if we do some wacky hand-held shots. (I think best shots are never done from shoulder.) Or will we want an lcd for those dog's eye pov shots.

Flip it over? You mean position it somewhere other than its rendered location? Of course! You can put the EVF wherever you want... mount it anywhere, put it on the arm, bend it into position, hold it to your face with your hand, have it 10 feet away from camera, whatever. Modularity!

No, I mean remove the rubber eye cup, so you can see the image on the evf from a distance.

Most EFP/ENG EVF's have a hinge in the middle where you swing the eyecup portion of the EVF open and from a distance see the LCD screen at the bottom of the inside of the EVF. You do that for low and high angle shots where you physically can't get your face up to the eyecup. Alternatively, the eyecup is easily removable so that you can do the same thing - see the LCD screen at the bottom of the EVF for shots where you can't get you face up to the EVF.
Will the RED EVF be capable of this? It hasn't been mentioned or confirmed that I know of...

Absolutely, but it's been a traditional workaround for those who have EFP/ENG EVF's that did not also come equipped with an LCD.

Just mount the EVF away from the cam using the included RED ARM or some other rig. There's really no need to open the EVF eyecup with such a modular system.

If your only buying the evf though the option to see it from a ways away would be good.

For real low hand held shots at arms length, and real high hand held shots at arms length, and super high sticks shots, you aren't going to be able to get your eye up to the EVF cup. If you aren't running an LCD simultaneously (something RED One can do by the way), either a removable EVF eyecup or the EVF opening up to reveal the screen inside, will solve your problem.

Absolutely. In extreme situations like these you won't get around to use the LCD. But I'm not a fan of opening the EVF eyecup because a. you can't see the screen really good from a distance or from an angle and b. dirt may enter the EVF.

Using the evf at a distance is not nearly as good an option as the lcd but if your run and gun or don't have an lcd the option is better then no option.
As fat as dirt entering the evf I would be suprised if it was windy and dirty that an eyecup flipped up or down would really make much of a difference. In a windy dusty situation I would be much more concerned with my lenses then the evf.
