Multitouch definately presents wicked applications for colour correction. Imagine colour correcting and grading in realtime using all your fingers simultaneously controling all the values etc.. Sort of like sculpting the image through abstract visual based controls. But thats got nothing to do with the camera...

The controls for the camera would be equally insane.. the paradigm will be shifted from basing your interaction on mechanical restraints (knobs, sliders, buttons) to unconstrained visual abstraction of control methodology.. So you could basically maneuvre your values based on contorting a line or a blob of some shape..
