Shooting a 2 hour feature with the RED one and have a mac book pro for offloading. What kind and how many drives should we have for dumping the 4k footage?

I don't know what the standard is, but I keep 4X500GB Lacie Ruggeds in my kit, then dump onto a larger system back in the office. Currently that is our Xsan.

G-Techs have worked well for me. At least two.
I don't recommend a laptop. Which project is this for??

Yeah i dont suggest using a Macbook Pro for your main archive. For the new macs (I dont mean the Macbook Pro 15" or the other sizes other than 17") Because of the esata connection.
Offload your data from your RED harddrive/RedDrive to a external harddrive via esata connection -there is a software driver plugin for the express card port (the old 17inch MacBook Pros have them, as do the new MacBook Pros -17')
A good sampling of data rates can be found here (if you even think about using something other than e-sata)
