"Hearts of Darkness" is kind of the ol' stand-by answer. Great making-of flick.

Lord of the Rings DVDs pretty much rule over everything in terms of bonus content.

Lost in La Mancha chronicles the unmaking of a movie.

Speaking of Gilliam, there is a feature length making documentary on the 12 Monkeys DVD.

The Project Greenlight DVDs are fun to watch, particularly the first season, for me.

Clerks. X DVD has a very good feature legth doc on disc 3. The Clerks. II DVD also has a pretty good feature length doc as well.

...all I can think of off the top of my head, I'm sure there are many many others.

On the Sin City DVD, I was blown away that the entire thing was shot in a green screen studio.

There was actually a fist fight where the two actors fighting never even met each other in real life. They were shot months apart.

If you want to see some true behind the scenes horror, as well as a director who had the guts to stick it out, check out the legendary "Burden Of Dreams" featuring Herzog.
