What would the heat issues be if a Red was stuffed into a titainum can and sent to 12k feet below sea level?

Well... at 12K feet down the water temperature is just above freezing (4 degrees C). It seems like that would pretty much make the ambient temperature inside a case pretty cold... especially if the case is metallic.

I thik the heat would be manageable in that situation... Probably better than most conventional underwater applications where the water is a lot warmer and the camera is still stuffed into an aluminum can. Probably wouldn't be too difficult to test on the surface - place camera in the can, place can in the fridge in a tub of water or test the camera out in the can submerged in a bucket of ice water and see if it overheats.

More than heat, I would be concerned with condensation inside of the can as temperatures drop closer to freezing. But I'm going to assume you've sent cameras this deep before and already know what you're doing... I haven't -- sounds like fun. At depths of 12K feet though, that's really getting down there...

How many fibers (single, dual)would it need, 2 for full quality?

Just a few recommendations ...
Suggest you use HY 100 steel versus titanium for your pressure vessel.
Visit: http://www.diversifiedmetals.com/productsdetail.cfm/144 as a resource and for specs.

Suggest you dehumidify the internal environment by supplanting the ambient air with either SCUBA air (which is inherently dehumidified) or an appropriate inert gas as condensation is indeed the concern here, not overheating, as the internal temp rapidly reaches that of the water temp ... which indeed is slightly below freezing; usually before you even hit 600 ft.)

You're talking 12,000 feet under the sea... I'm talking 12,000 feet over it. Look at my avatar. The "extreme environment application" that I specifically quoted in my previous post is not limited to your application specifically. Please be a little more careful with your attitude next time.
