Will the Scarlet Canon mount allow the use of Canon lenses IS (image stabilization)?

No official word yet. But since it is a feature that is built into the lens, I have strong hopes that it will work.

If I'm not mistaken, IS works on the Birger Mount.

Correct. Make sure to turn your IS off when you're on a tripod!

The IS might think that the end of smooth pan is a wobble and react to it, thus ruining the shot.

I find the problem especially problematic when you're locked off. You'll notice subtle movement in the image sometimes--its the IS! Turn it off and everything is good. Turn it on when you're hand holding the camera. The IS switch is located on the Canon lenses that have IS. Some of them are "tripod sensing", which means they are supposed to turn themselves off when they realize that they're on a tripod. So its important to test your actual lens/camera combination to make sure IS is not altering shots in ways that you don't want it to.
