If I were to take DPX files and go into MXFactory then to Avid Media Composer (for an offline) all I'd really need would be Timecode as far as metadata, right?

This should work, but have you priced MXFactory? $2,500, ouch!

You will want file name as well since you could have multiple files with the same timecode - in order to make a file unique for multicamera and multi-day shoots you will want to have:

1. Filename
2. Camera ID
3. Shoot date
4. Timecode

There is other interesting and useful metadata inside the RED file just waiting to be let out... ;)

Consider also the pretty massive storage requirements of the DPX (and raw Redcode) - for a feature it could easily be upwards of 10-15TB for the Redcode alone, especially if you're planning to go multi-camera.

As for metadata, it should be possible to use just reel name and timecode, shouldn't it?
