Has anyone used a Cubix desktop expander (2 or 4) with a hackintosh? Is there any reason why it wouldn't work?

If it works on a Mac, it probably works better on Hackintosh.

Would not using a hackintosh negate the need for the expander in the first place as PC MBs provide more PCI-e slots to begin with?

Not exactly... if you want 1x gui + 3x GPU you need all slots or water cooling... with a cubix you don't need watercooling and has 4x more slots for raid redrocket decklink and fw800.
