I think the debayer, even more than saving to CF cards, would be the bottleneck of shooting full resolution on one of these cameras, so it makes sense that it would be set up as you say so that video...
Are you getting those resolving power figures from DXOMark? A lot of lens guys are very skeptical of their tests. They test one copy, as far as I know, and there are a few examples in their database...
MB/sec and Mb/frame work out to very different numbers, so definitely only one of those is correct.
