I want to spend the winter basically relearning color and establishing a more concrete understanding from the ground up. Is there a course or series or books that I can get into to do this?

Thanks for your suggestions and dialogue!

As a colorist or for color theory?

For color theory applied to cinematography and video, you could look at these books:

Color & Mastering for Digital Cinema by Glenn Kennel
    https://www.amazon.com/Mastering-Di....4855461&sr=1-1

Digital Cinematography: Fundamentals, Techniques, & Workflows by David Stump
    https://www.amazon.com/Digital-Cine....cinematography

Color Reproduction in Electronic Imaging Systems by Michael Tooms
    https://www.amazon.com/Colour-Reprod...1130852&sr=1-1

Digital Video and HD: Algorithms and Interfaces by Charles Poynton
    https://www.amazon.com/Digital-Video...1131105&sr=1-1

Be warned these are tough reads with a lot of math (and a lot of charts with circles and arrows on the back of each one).

MixingLight.com is a good site for information on the practical application of color for color correction.

There are also some great online courses at fxphd about colour theory, especially the Charles Poynton ones. Yeah, okay, there're a bit dry but the knowledge is most certainly there. It's with a very pipeline based technical perspective - but i think we all really need to understand and get this from capture to display - it's a minefield at times.

    cheers
