When you select the ISO, you can edit the list of ISOs that appear in that list. Just add ISO800 and you're good.

But, isn't the point that the DR is maximized at a higher ISO in LL mode? Meaning, you lower the effective DR if you go under in LL.
I’m about to shoot a short that’s at night. I’m going to do some tests, but The majority of the short takes place outside (going to emulate the moon) and a dark bar. There really won’t be too many highlights, but there will lots of shadows. I want to rate my sensor lower to keep my blacks cleaner.
Within a mode, DR is constant regardless of ISO. When you change ISO you're just changing the distribution of below and above stops.

@Graeme, then is my thought process correct in rating the sensor to put more DR in the shadows?
Lower the ISO, the more DR in the shadows (vs highlights). Higher the ISO you build in more highlight protection. So using LL mode will start with the sensor giving you lower noise in the shadows, so just use as little ISO gain as necessary to make the key elements of your low-light scene as bright as you need to see them.
