I've used this Benro 100mm High hat with Woods suction cups with great results for hood mounting...

Very Cool, I was looking at Matthews Freedom Car Mount System For Hood. https://www.bhphotovideo.com/c/produ...l?sts=pi&pim=Y

    And this for the side

What would I have to buy to add to this cheeseplate to allow me to use a tripod head, or movi or ronin2 or give me some way to tilt /pan the camera.

Jason I've got a rigwheels system and its great for mounting the movi to hood or side. I've also removed the legs with magnets and attached them onto a willy's widgets mounting plate for a quick hood mount solution, which has worked well (though in limited use).

Not a fan of suction cups, though I've used them plenty of times. If you have the capital and some guys who can rig it up correctly, build a cage around the front end. Get yourself a Black Arm and a Ronin 2 and do it the safe way.
