There are a number of factors of why some RED footage looks "plastic", "CG", "Not Organic". In my opinion, a lot of it has to do with the developing and subsequent post manipulation. In some cases, it's overly used noise reduction with aggressive sharpening, in other cases it could be a combination of effects filters being used.
In terms of skin tones, I have seen enough well shot footage at this point to know that skin tones can look great with RED. But, it does take some understanding of RED's color spaces and also comes down to what it has always come down to - lighting and makeup. That's why you can't ignore tungsten because it still has a place in cinematic lighting.
There are many more reasons why footage shot with RED could end up looking artificial. I contend that those who understand how to get the most out of the camera, know how to avoid getting that look unless it's intentional.
Steve is right.. alot of stuff looks plastic right now ( RED or not RED ) because that is kinda in style right now.... both in film and print. I am sure it will pass :)
Wait till Antichrist and The Book of Eli come out. =)
Antichrist in particular strays away from the "plastic" music video look.
You can still do sick imagery without the brushing of the air look "Plastic". I've been a still photog for a few years but my workflow is now changing to incorporate Reds modular offerings. The same principles I use to retouch skin on my site in CS4 is similar to how I grade in cinema.
Dave Hill doesn't do the HDR. He does a lot of compositing. Setting up each shot, lighting, etc so that post would just bring out post.

I try to steer away from doing those looks, but unfortunately you have to deliver what the clients ask for, and now that is what they want, but for my own stuff and those shoots that I'm in charge of, which will be more and more in the feature, I try and stay to a very Photorealistic and more natural cinematic look my self, I love the baby skin look, but not over Photoshopped, to the point of loss of skin detail.
RED has sure changed my perspective in both Still and motion image capture, and the Epic will sure rock the way I will do things in the feature.
I pop the vid on a thumb drive and stick in my xbox 360.
The countdown plays, the redband "warning" plays and then.....it says that it's in a format not playable on my 360.
How the hell can that be? It just played the beginning of the damn vid. It's not like the format of the file changes when you get to Red footage.
geez. I hate technology sometimes.
Oh, and my desktop is too old to play it smoothly so now I'm going to try my wife's laptop.
Yeah. Maybe that'll work.

Superb footage and I have to agree with what others have posted.
That is one sexy camel at the end.
