When using the Canon mount on the Epic, is it possible to ajust the aperture fluidly with the wheel on the side handle or Red mote?
I don't know if would even be possible technically wise but would be a great option.

Not possible. It's not a RED problem. . . it's a lens design problem. Canon iris blades only move in 1/4 stop increments.
