In the Ops Guide, it says operating temp is 0 deg C to +40 deg C. What does +40 mean? What is the max recommended operating temp before the fan kIcks on and the camera is getting pissed? I generally see it between 50-60 deg C.

I always took the 'Max operating temp' to mean the ambient air temp around the camera - not the camera temp itself… Pretty much if the air temp is +40ºc I'm not taking the camera out anyway.
Can't believe I get paid to do this.

0° to +40°C means the environment you use the camera in. If the core reaches +75°C the fans will kick in on high automatically. Don't know what the sensor's limit is, since the core is what hits its limit first.

So what does +40 mean? To me that just says over 40, how much over 40?

to me it sounds like 40 above 0, not above 40C. It's just to make clear that it's not -40C

    +40ºC is 40º above 0ºC… Metric isn't rocket science.

Ok, yeah, that makes perfect sense. So it's not talking about internal operating temperatures, just ambient temperatures. Got it.

Ok, now that that's settled, what do you guys normally run yours at. Filming some long stand ups I got worried when it hit 60c. Can we run it longer then this? I usually run the fans at 35%, and then 75% during breaks.

Like I said, when the core hits 75 the camera will automatically throw the fan on full. So I wouldn't consider anything below that to be hazardous. Just realize that on a long interview take with the fan set on low, if the core hits 75 you'll get a massive blast from the fans. There's a lot discussion on fan noise here.
