Is anyone flying RC Octocopters in Sydney with a reasonable camera in it. Could we fly one of these puppies over suburban streets without being arrested? Any contacts would be appreciated?

Tom give me a call on 0424754282, got a system in byron and one in brisbane which we can easily get down to sydney, available with either Epic/ Scarlet or a 5/7D.
there are a few things to be considered beforehand though.

Without a PPL and OC from CASA you cannot fliy unmanned aerial vehicles for anything other than sport or education.
Just saying ;)
That said, even under the 'model aircraft' rules you can't fly them in populated areas.
